My grand-parents were winemakers in a tiny village, South West of France. Then, as a child, I participated to the harvests end of August, mid of September. It was magical: I was drunk with fresh air and full of grapes. It was all about sharing time, conviviality and parties !
As a grownup, I know now that harvest time is not only about partying !
Depending on the season and depending on the climate of the previous months, the harvest may take place earlier or, on the contrary, later, like this year because of the severe frosts in March and April.

The winemaker begins the harvest when the grapes have reached the desired degree of maturity: here all is about ratio of sugar and acidity! It is a question of balance and anticipation of the results the winemaker wants to achieve ultimately !
